Lard of Arnad Dop - 300 grams
Lardo d'Arnad , a product with a protected designation of origin (PDO) , is obtained by processing only the shoulder of pigs weighing more than two quintals from farms in the Aosta Valley, Piedmont, Lombardy, Emilia-Romagna and Veneto.
Adequately degreased and then squared, it is placed to mature in "doils", ancient containers made of chestnut or oak wood, inside which, the layers of lard superimposed until full, alternate with a mixture of salt, water, spices, natural flavors and aromatic mountain herbs.

Here the lard is left to mature for at least three months. It is during this process that the product becomes concrete, taking on the scent and the much appreciated organoleptic characteristics that distinguish it. Each slice is white when cut, with a possible vein of meat on the surface and a slightly pink heart.
On tasting it melts in the mouth, leaving a pleasantly sweet taste on the palate.

Directions for use To obtain precise slices even without the slicer, it is advisable to put it in the freezer for about 15-30 minutes before slicing it.
Directions for use Store in the refrigerator (between 0 ° and + 6 ° C). For better oxygenation, it is recommended to extract it from the vacuum bag about 15 minutes before consuming it. After opening, wrap in aluminum foil or cling film.
Pairings To enjoy it at its best, it is recommended to combine it with rye bread croutons, softened by a drop of honey.
